Aromatic Pecorino Cheese di Fossa, is made only with sheep milk and it is aged for 10 months. It is produced in the Umbrian Apennine, it is matured for 5 months and then it is placed inside a pit (fossa) where it rests for 90 days. Then it is matured further on for 2 months.
