Pecorino affinato in Vinacce (seasoned with grapes) is produced following artisanal methods, it is matured for 4 weeks covered with several layers of Merlot and Sangiovese grapes. At the end of this long process, pecorino has persistent notes of grape, aromatic leaves and dried fruits.
