We are in Cirigliano, in the province of Matera, a little medieval village dominated by the castle with its oval tower. Here Mr. Giovanni Ciliberti run Sapori Mediterranei, which produces typical cured meats respecting local tradition. Their production has been handed down from generation to generation whose aim is to preserve the original recipes.
