The careful selection of grain varieties in the makeup of the flour (San Carlo, Flaminio and Iride amongst others, all cultivated at San Rustico on land belonging to the Azienda Agricola Mancini), gentle milling, low yield (53-54Kg of flour for every 100g of durum wheat grain - representing practically the heart of the grain), artisanal pasta production (bronze dies, slow drying at low temperature), all contribute to making this pasta outstandingly delicious.
